In addition to teaching a course on Food, Health, and Environment in History, Jeremy also has a major research project in progress on the history of food and agriculture on the Great Plains before the Dust Bowl. In his previous work, he has published articles or given conference presentations on the history of agricultural experiment stations on the Great Plains, the history of soil science, the early development of the science of range grasses (agrostology), and the recent history of organic farming.
